FIELD TO FORK

The 1st in Greece with underground storage tanks for Kalamata Olives, achieving perfect – stable temperature condition for optimum natural fermentation.

The tanks are interconnected through a water-hydraulic system that will not allow bruising of the fruit when stored or transferred. When the curing is complete, the fruit is automatically transferred to the processing site where they go through the final sizing, and are ready to be processed (dipitted, sliced or/and packaged) on order.

VERTICAL INTEGRATION

We do everything in-house, ensuring the entire process is managed and executed by us, the same people who tend after the earth and the trees, the procedures of growing, pruning, watering, harvesting, processing, packaging and shipping. Our crew, consists of full-time agronomist and experienced workers, ensuring top quality product, created with environmental-friendly best-practices. We invigorate our staff by cooperating with a number of selected olive-growers throughout Greece, maintaining the continuation of our methods and ensuring optimum quality with each and every crop.

We are committed to sustainability by developing forward thinking policies and by improving our practices in economic, social and environmental acts. The new olive growing sector and the food industry as it evolves is a big challenge for us that will rise as the effects of climate change become more and more noticeable. Water and waste management practices are crucial to us. We support strongly, by adopting sustainable agricultural practices, the harmonious relationship between our olive groves, the bees which according to industry’s experts act as pollination helpers and monitor the health of the olive grove, the ecosystem, the plant and animal biodiversity.

CERTIFICATIONS

Our new processing and packaging unit (est.2016) is cutting edge adhering to all HACCP and FDA requirements (BRC/IFS certified) and consists of a fully automated unit, ensuring optimal quality to the end-consumer. Prior to packaging and shipping, there is a process of natural debittering that takes approximately three to five months and is monitored daily by certified scientific personnel that ensure that the end-product is of optimal quality.
